Well here it is mid-June and it’s been 2 weeks since I last sent out a newsletter! Thinking I am retired, I am wondering where all the time goes. Maybe instead of being RETIRED, I am just tired! 🙂 Love the much simpler life of living in an RV, not so much house to clean or yard to take care of which gives us time for lots of other things (maybe too many)! Still on my summer “to-do” list is new sheers for all the windows and deep clean the carpet. I was hoping to maybe start some wall painting and tiling in the bathroom but with the way the summer is stacking up, not sure we will get to that. But anytime we can meet and visit with friends or our family, that will always come first.
We had a wonderful time at the Good Sam Sambroee and have made so many friends there that it is just like old home week to us. The attendance was way down and they are working hard to come up with ideas to bring new members to the rally. While visitng with my friend Danise who is always so good about sending in tips and ideas, she suggested that once in a while I do a recipe and list the products we sell that I use while making them so a “Shout Out” to Danise as this will be my first…thanks for the idea Danise. Thought this recipe sounded good plus easy. We do Mexican Pizza’s on the grill using the grill racket and steak tacos. Sure cuts down on the mess and meat falling through the grill.
Brown 1 # ground beef with 1/2 cup chopped onions (I use 1.2 tsp onion powder).
Add 1 tsp. of each of the following spices: chili powder, cumin, garlic salt, paprika, salt & pepper to taste. Adjust these all to your own liking. Stir until well blended. I add 1/2 cup water and let simmer on low until all the moisture is absorbed.
To one 15 oz. can of refried beans add the same spices as above only using 1/2 tsp. Add a little water and simmer, stirring frequently.
Use either corn or fried flour shells. Top each with meat then beans and sprinkle with shredded Mexican 4 Blend Cheese. Put on Grill Racket and cook over low heat until the cheese is melted. We open up the racket so we can cook 2 at a time. Remove from grill. Serve with chopped tomatoes, onions, guacamole, shredded lettuce, sour cream and your favorite taco sauce. So easy and can make everything ahead and assemble at dinner time. ENJOY!
